A cookery school for cookery classes in Dorset - South West - UK.
Cookery courses are led by Fraser Christian, a highly qualified and experienced demonstration chef.
Fraser has worked with food since an early age, after qualifying with
distinctions from Brunel catering college in Bristol, Fraser went on to
work with and experience many different cultures and cuisines of the
world, more recently leading instructor for fishy based events, at the famous River Cottage.
An experienced, passionate professional demonstration chef, and teacher, Fraser will gladly share his experience and knowledge regarding the local organic, Wild and seasonal produce. The direct connection it has with taste, textures and nutritional benefits, is easily recognised in the amazing, yet simple dishes we create.
Fraser promotes a simple, relaxed and honest approach to food and cookery, helping you gain confidence in producing amazing and delicious dishes worthy of any fine restaurants table.
We also host dinner party's, private events and bespoke classes on request.
Courses can be run in your own home or local venues.

One day cookery courses
Aprons and all equipment are provided - No previous experience is required.

Butchery using a whole pig - along with Professional butcher Phil Frampton and Fraser Christian.
This butchery course takes you through the preparation of a whole pig in a day. The individual joints and cuts of meat have many uses, the methods of cookery ,skills and recipes needed to produce roasts, stews, bacon, sausages and hams will be demonstrated. Take home with you, your own sausages and bacon to cure. Lunch will be made using some of the food we produce on the day.
Seafood preparation and cookery course

A mix of both fish and shellfish - with professional Chef and fisherman Fraser Christian.
This course covers in depth the journey from sea to plate. The fish and shell fish is always wild, seasonal and local. We will demonstrate and cook a comprehensive mix of both flat and round fish, along with a great range of shellfish that can include, ever thing from Crabs, to Oysters. Mussels are cooked three ways and of course the ever important basic fish stock. You will prepare and fillet a mix of the ingredients of the day. Lunch will be made from the ingredients we work with, and regular tasters and refreshments are all ways available
Basic butchery and meat cookery course

Chicken, Lamb, Pork and Beef - with Professional butcher Phil Frampton, and Fraser Christian.
Basic Butchery skills are great when it comes to cutting your chops, rolling your roasts and boning and stuffing a Chicken. Take advantage of larger economical cuts and confidently butcher them in your own home, using only a sharp knife and your newly found skills, ensuring nothing goes to waste.
Individual bookings @ £85.00 per course, per person - 50% discount for children when accompanied by an adult. Can be as a gift.Food and drinks served through out the courses.

| Recent Course Feedback: Fraser, I thought I should contact you and let you know how pleased I was with the fish skills course I recently attended. I have always loved to eat shellfish, particularly Crab. To now be able to dispatch it humanely and cook it for myself is great. Whilst I thought I knew the basics of filleting fish I must admit to avoiding flatfish. No problem with them now though. I was also pleased that all the ingredients we used were local produce. To be honest they were so local I was worried we would have to pick our own salad and veg. You made some fantastically tasty dishes from our prepared fish and shellfish and there was so much of everything, I had a job to do it justice. It was much more fun than dining out in a top seafood restaurant and for the amount I ate, it was a whole lot cheaper. Please be assured that I will be joining you on some of your other courses. All of our course dates coincide as closely as possible with the best seasonal availability when it comes to the ingredients of the chosen subjects. All ingredients are sourced where possible directly from locally trusted producers, that use sustainable practises and organically produce some of the finest and freshest foods available. All our meat is from naturally outdoor reared organically produced stock.
All our fish and shellfish is from wild stock that has been caught by local day boats using practises that have no adverse effect on the marine environment, including diver caught scallops and line caught sea bass All our fruit and vegetables are naturally and organically grow.
All our courses are practical demonstration based with a mix of hands on.
